Here in Easy Does It Land (also known as Fort Worth, Texas), the heat of the summer has finally broken. This morning, I woke up to temps in the 50s and dew on the ground. Welcome, Autumn!

That's not to say that the highs for the next few days won't creep back into the mid-90s. But we North Texans will take what we can get. Temps in the mid-90s are a far cry than the 110 degree days we dealt with over the summer. Amiright?

Chicken and Black Bean Quesadillas

It's no secret that here at the Easy Does It homestead, I tend to make easy meals that can be prepared rather quickly using few ingredients. This recipe is no exception - it includes shortcuts such as using Rotel and pre-grated cheese to save time. With that said, if you have a little extra time, feel free to grate your own cheese and dice up some fresh tomatoes, chile peppers, and onions!

Ingredients:
3 chicken breasts
1 can black beans, rinsed and drained
1 can Rotel, partially drained
1 8 oz. bag of shredded Mexican cheese
Cooking spray
8 taco-size flour tortillas

Directions:
Cut chicken breasts into chunks, add to pot of cold water and bring to an easy boil for about 15 minutes or until chicken is cooked through. (If it floats your boat, you can add diced onion or spices to the water to flavor the chicken as it cooks but, honestly, most of the time, I skip it...) Let chicken stand until it's cool enough to work with and then shred with two forks. Mix in the black beans and Rotel.

Heat skillet over medium high heat. Spray with cooking spray.

Top a tortilla with a handful of cheese, a big handful of the chicken mixture, then another handful of cheese and finally another tortilla. Place in skillet and cook for roughly one minute or until tortilla is crisp and lightly browned. Gently flip and cook for about a minute on the other side.  Repeat with remaining tortillas, adjusting time and temperature as necessary to achieve desired crispiness. Use a pizza cutter to cut each quesadilla into six triangles.

Serve with sour cream, guacamole, and/or pico de gallo.



Serves four. Makes good leftovers if reheated in oven. Not so much if reheated in the microwave.

Thai Chicken - The Easy Way

The hubby and I love Thai food. But the options in the Fort are kind of limited. Until recently, we visited Junsuree with regularity but it's now been sold and will reopen with a new name and a new concept. Then there's Thai Tina's. But we didn't have the best first visit there and haven't been back. And that's about it. So I decided to experiment with ways to get our Thai fix at home and stumbled upon this easy recipe that does the trick.

Ingredients
1-2 tablespoons olive oil
3 large chicken breasts, cut into bite-sized pieces
1 cup matchstick carrots
1 pound bag of mixed asian vegetables, thawed
10 - 20 leaves fresh basil, torn
1 can of light coconut milk
1 heaping tablespoon of red curry paste (or more)
1 tablespoon brown sugar (or more...play with it until you get the flavor you like)
Juice of one lime
Crushed peanuts (optional)
Jasmine rice

Directions
Cook rice according to directions. In medium skillet, heat oil and add chicken. Brown for a few minutes and then add mixed vegetables and carrots. Cook a few minutes more. Meanwhile, combine coconut milk, red curry paste, brown sugar and lime juice. Pour curry sauce over the vegetables and simmer for several minutes for flavors to blend. Add torn basil and simmer a minute more. (If your rice takes 20 minutes to cook, they should finish at about the same time.) Serve over rice.

Ignore the crappy photo quality. I served the dish on dark red plates that kind of disappeared into the background...

Serves four.

Magnetic Chalkboard Project

For some time now, I've wanted a big piece of art to fill a blank wall in my kitchen. I perused art and poster sites at length but never could find the perfect piece in my price range. Then one day, I was struck with the perfect solution: a magnetic chalkboard! I could write my weekly menus on it. We could post the countless wedding, shower and birthday invitations we get. Hubby could leave me reminders about what he needs me to add to the grocery list. It was the perfect idea!

But then I started looking for one. I had no better luck than I did looking for a piece of art. The large ones were cost prohibitive. And even then, I couldn't find one big enough. So I decided to make my own.

I searched Craiglist for a frame and came across this 3'x3' piece for $20:

I brought it home and got to work!

Materials list:
Frame
Sheet metal
Spray paint
Primer (suitable for each surface you're working with - in my case wood and metal)
Chalkboard paint
Cup hooks
Extremely fine grit sandpaper

Directions:
Remove existing hanging hardware and art from frame and set aside
Prime frame if necessary
Spray paint frame using several light coats to achieve a smooth and dripless finish
Finish with a high gloss lacquer if you want
Spray paint cup hooks at the same time if you want them to match the frame
Allow to dry for 24 - 48 hours

Have sheet metal cut to fit frame
Wet sand sheet metal
Rinse sheet metal and allow to dry
Apply multiple coats of primer to sheet metal until you achieve a uniform finish
Once primer is dry, apply multiple coats of chalkboard paint until you achieve a uniform finish
Allow to dry for 24 - 48 hours

Reassemble, mounting sheet metal in front of original artwork or cardboard backing (sheet metal is kind of thin so putting the original artwork or cardboard backing behind it will help hold it in place a little better)
Reattach hanging hardware
Install cup hooks across bottom of frame to hold keys, etc.
Prime chalkboard by rubbing a piece of chalk lengthwise across entire board and then erasing
Hang using heavy duty hanging hardware (sheet metal might be thin but it's heavy!)

Tada!

Chicken Spaghetti

It seems like every Southern family has a recipe for chicken spaghetti. My own family didn't -- darned Northern parents! -- but luckily my husband's family does. Well, technically, each of his sisters and his mom have a different recipe for chicken spaghetti. So I took what I liked from each of their recipes and left out what I didn't. Here's how we eat it at our house:


Ingredients
3 chicken breasts (boiled and shredded)
1 package dry spaghetti, broken in half
1 can cream of mushroom soup
1 can cream of chicken soup
2 cups grated cheddar (one cup for mixing in, one for topping)
1 can Rotel
1 teaspoon Lawry's Seasoned Salt
Dash of cayenne pepper
Salt and pepper, to taste


Directions
Preheat oven to 350 degrees. Boil chicken breasts and shred (reserve water). Boil spaghetti in reserved water for just less than the time indicated on package (pasta will still cook a little in the oven). When spaghetti is done, combine all ingredients in a casserole dish with the exception of the second cup of cheddar. Top with remaining cheese. Bake at 350 degrees for 30 minutes.


Serves 4-6. Makes good leftovers.



Note: When photographing this dish, I couldn't for the life of me figure out why it looked funny. Then it hit me: I forgot to mix in the Rotel. Duh! So picture some color (not to mention flavor) mixed in there.

Living Room Inspiration


I bought my living room furniture second-hand right after I graduated college, back when I was living in my previous house. A co-worker at the time had just purchased the set when she and her partner decided to separate. She offered it to me for a very fair price. It was (and still is) beautiful furniture but I wouldn't say it was exactly my style. Nevertheless, it was better than what I had so scooped it up!

When I moved into my current home, I decorated (I use that term loosely) the living room around it. Paint colors, rug choices, etc. But after six years of living in this house -- and maybe eight living with the furniture -- I've decided that it's time for something new.

Something a little like the above set. Would love to hear your thoughts and ideas!


She's Crafty

Since I started the new full time job and decided to take a break from the side business, I have a lot more time on my hands. Not that you'd know it by how infrequently I post! I've used the time to catch up on some things around the house, do a couple projects and sleep in. ('Cause this girl has some serious trouble getting up in the morning. Remember the 20x20? How could we forget that annoying little adventure?)


The first project I decided to conquer was organizing all of my necklaces and earrings. I'd had an idea in mind for some time but never could find the time to put it into action. That is until recently. A friend gave me an unpainted frame that she wasn't using and I immediately realized that it was perfect for my jewelry organizer project! So I ran to the hardware store and picked up the necessary supplies.


Materials List
Picture frame
Spray paint
Cardboard or foam core board
Fabric 
Window screen
Cup hooks
Saw tooth hangers
Hot glue gun
Stapler
Small nails


Directions

  1. Prime frame if necessary
  2. Apply several light coats of paint to achieve a smooth, dripless finish
  3. At the same time, paint to cup hooks if you want them to be the same color as your frame
  4. Finish frame with a high gloss lacquer if you wish
  5. Allow to dry for 24 - 48 hours
  6. Meanwhile, cut cardboard to fit your picture frame (leave a couple of millimeters to account for the fabric and screen)
  7. Stretch your fabric tight over the front of the board
  8. Using a hot glue gun, adhere your fabric to the back of the board (you don't want the hot glue to show through on the front)
  9. Then, stretch the screen tight over the front of the board
  10. Staple the screen to board all the way around (on the back and very close to the edges - don't want the staples to show!)
  11. If your frame doesn't already have a hanging mechanism, install saw tooth hangers 
  12. Screw the cup hooks into the front of your frame (I opted to do five along the bottom for shorter necklaces and one at each top corner for longer necklaces)
  13. Insert wrapped board into frame opening and use small nails to secure it
  14. Hang


Voila! Now your jumble of necklaces and earrings is organized and in reach.







Weekend Brunch with Friends

Over the weekend, a good friend celebrated her birthday with a potluck brunch. We enjoyed a smorgasbord of delicious food and drink including mimosas, Bloody Marys, baked French toast, truffled hashbrown casserole, breakfast pizzas, bagels and lox, and more. I brought an easy to make spinach and mushroom quiche 'cause what's a brunch without quiche, right?

Spinach and Mushroom Quiche

Ingredients
1 frozen pie crust
4 eggs
1 cup half and half
4 ounces button mushrooms, coarsely chopped
1 shallot, diced
10 ounce package frozen chopped spinach, thawed and drained
1 tablespoon butter
3/4 cup shredded sharp cheddar
salt and pepper to taste

Directions
Preheat oven to 360 degrees. Cover edges of pie crust and bake for 7-10 minutes. Meanwhile, melt the butter in a skillet over medium high heat. Add shallots and saute for a few minutes. Add mushrooms and saute a few minutes more. Remove pie crust from oven and cover bottom with half the shredded cheese. Top with spinach, shallots, mushrooms and then the remaining cheese. Beat eggs with salt, pepper, and half and half. Pour eggs over the top of the pie. Bake at 360 degrees for 50 minutes or until a toothpick or knife inserted in the middle comes out clean.



The greatest thing about quiche (other than the fact that it's super easy and yummy!) is that you can fill it with basically anything! If you're a carnivore, throw some crumbled crispy bacon in there. Don't do spinach? Try broccoli. You get the idea... Also, feel free to substitute whatever dairy you prefer or have on hand. You can use anything from heavy whipping cream to skim milk!

Serves eight. Makes good leftovers.

And also, I'm a sucker for a sale. Gap and Old Navy -- along with almost every other retail establishment in the US -- hosted some ridiculous Memorial Day sales over the weekend. Gap offered 40% off nearly everything in the store including sale merchandise (which is how I snagged TWO tops for just $2.38 each) and Old Navy offered 50% off clearance merchandise. I feel like a bit of thief because I got a steal on my haul. (Haha, that was funny. Right? No? Sorry.)

Born to Run (Myself Ragged)

This week has already been a little nuts and it's not about to slow down any time soon! Allow me to fill you in:

On Monday, I had to rush straight to a neighborhood board of directors meeting immediately upon getting home from work. On Tuesday, it was a Home Tour committee meeting that I had to hurry to get to. Tonight, I have dinner with my advisory council (I plan tradeshows and work with a group of industry experts to guide the direction of the event). Same thing Thursday. Friday, my fabulous company is renting out a suite at the Mavs game to celebrate a good first quarter (!!). Saturday, I'm planning to participate in the neighborhood garage sale. And, finally, Sunday the hubby and I are headed to our home town to celebrate his lovely mom's birthday.

Phew! I'm exhausted already! (No, really. I could use a nap.)

Though yesterday I was already awake when my alarm went off. But only because I was having trouble sleeping. Again.

Meatless Monday - Cheesy Spinach and Artichoke Pasta

I came across this recipe a week or so ago on Real Simple and decided to give it a go. It has yet to be hubby tested and approved but the bestie and I thought it was delish! Exactly as you'd imagine: spinach and artichoke dip with pasta plus a kick. Do it!


Ingredients
8 ounces rigatoni (or other short pasta) ½ box
1 14-ounce can artichoke hearts, rinsed and quartered
1 9-ounce package frozen creamed spinach, thawed
1/4 cup grated Parmesan 
2 cups grated mozzarella (8 ounces)
black pepper
throw in red pepper flakes and a sprinkling of cayenne pepper to taste

Directions
1. Cook the pasta according to the package directions; drain and return it to the pot
2. Add the artichoke hearts, spinach, Parmesan, 1 cup of the mozzarella, and ¼ teaspoon pepper to the pasta and toss to combine
3. Heat broiler. Transfer the pasta mixture to a shallow 2-quart (or 8-inch square) broilerproof baking dish. Sprinkle with the remaining cup of mozzarella (or just a good handful)
4. Broil until the cheese is browned in spots, 1 minute

To healthy it up a bit, use whole wheat pasta and part skim mozzarella. The rest is what it is...

Serves four.

The hubby's in DC for a meeting for his upcoming event so I had the bed all to myself last night. (Well, don't tell KT, but I may or may not have had a small, furry snuggle partner. Every once in a while, when KT's out of town, I let Rhy-dog sleep in the bed instead of in her crate. Bad Chelsie!) Anyway, I slept like a baby and woke up totally refreshed even before the alarm went off for the first time. So, when it chimed for the second time at 6:25, I happily popped out of bed and started my morning. Why can't every day start that way?


Let's hope the next two days are just as easy!

Don't Judge Me

I have a confession: For pretty much every night of my whole life, I've slept in my makeup. *collective gasp from the audience*

Before you start lecturing me, I already know that it's totally bad for your skin. And I don't really have an excuse for it. It's just that, as I've mentioned before, I'm a little lazy. And it's just such a chore to get the face wash out of the shower, find a clean washcloth, and turn on the water. And when I do attempt to wash my face in the sink, I almost always end up getting soap in my eyes. So I just don't usually do it. (OK, those sounded a little bit like excuses. But they're not. I promise.)

You know I love a good shortcut, so I once tried those makeup removing cloths. I used them a couple of times but they pretty much sucked and left behind mascara and eye makeup. They ended up sitting under my bathroom sink for a million years before I finally threw them away.

Anyway, last month, on a whim, I picked up the new(ish) Neutrogena Makeup Remover Cleansing Towelettes. The package boasted that they removed all traces of makeup even waterproof mascara. With a claim like that, I was in. (Have I mentioned that I'm sometimes a sucker?)


Surprise of all surprises! They actually did remove all of my makeup - including mascara! Afterwards, my face felt nice and moisturized, not tight but not oily either. And the fragrance is actually quite pleasant. I'm almost through my first package and, overall, I'd say they're a win! My only wish is that they came in a hard tub as the "resealable" cover loses its sealing powers pretty quickly.

Are we there yet? Days 14 & 15

It's evident that I'm failing my little self-imposed get-up-earlier challenge. To be quite honest, I'm actually only getting worse at it as I near the end. When these 20 days are over, let's never speak of my laziness, constant whining and excuse making again. Deal? Deal.

Yesterday, I was 12 minutes late in getting up. However, in all fairness, I only got about three total hours of sleep. I was wide awake and out of bed from 2:24 until about 4:45. (I thought that maybe if I got up and did something, I'd get sleepy again. I didn't.) I wasn't back in bed for 30 minutes before KT's alarm started going off. And it went off every nine minutes until mine did at 6:15... Fun times!



This morning was not much different: ridiculously early wakeup (3:30), followed by inability to fall back asleep, and topped off by the hubby's unanswered alarm. 6:25 is just when I thought I was getting up. Do you see that snooze button there? I pushed it. Twice. It was 6:43 when I finally got out of bed. 




I suck at this.

Meatless Monday

Some time ago, the hubby decided that we should give pescatarianism a shot. For no other reason than he wanted to eat more healthy stuff and less junk and felt he needed some set guidelines to hold himself to it. Now, I love me some fish and I love me some veggies so I was 100% on board with it.

And we did pretty well. For about a week or so. But for whatever reason, I had the hardest time coming up with easy and delicious vegetarian or seafood dishes every. single. day. It felt like we were eating the same meal over and over. And, let's be honest, fish doesn't typically make for great leftovers and we're kind of a leftovers-for-lunch-the-next-day type of family. So I started throwing a little meat back in the mix. Long story short, it wasn't but a minute before we were eating meat with almost all of our meals again.

Anyway, after our failed attempt at pescatarianism, I instituted what I like to call "Meatless Mondays." As the name implies, once a week, we make an effort to eat a vegetarian dinner. (Not quite as lofty as our original goal, but it helps us to eat a bit healthier!) As such, I'm always on the lookout for tasty new vegetarian recipes. The other day I stumbled across this one for Quinoa and Black Beans:

Ingredients:
1 teaspoon olive oil
1 onion, chopped 

3 cloves garlic, peeled and chopped 
1 red bell pepper, chopped
3/4 cup uncooked quinoa
1 1/2 cups chicken broth
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
salt and pepper to taste
1 cup frozen corn kernels
2 (15 ounce) cans black beans, rinsed and drained
1/2 cup chopped fresh cilantro


Directions
1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.

2. Add bell pepper and saute for a minute more.
2. Mix quinoa into the saucepan and cover with chicken broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes.
3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro.


I modified it a tiny bit by adding the bell pepper and upping the amount of corn. Next time, I'll probably double the quinoa too.

Serves four.

Day 8 - How Am I So Bad at This?

Maybe I'm just lazy but getting up earlier than usual is really hard for me. Especially when something throws off my schedule. You know, like daylight saving time...

Last night, I had a Home Tour meeting that lasted until midnight so I was up a little later than usual. Couple that with the time change and I may have accidentally turned off my alarm instead of pushing snooze.





Yup. That's right. I got up 47 minutes late today. But, I still got to work (almost) on time.

Spring Forward!

Tomorrow is my second-to-least favorite day of the year. My very least favorite day of the year is actually the day after tomorrow. That'll be the first day that every fiber of my being will protest getting up an hour earlier than it's accustomed to. Already dreading it.

In all fairness, "springing forward" isn't all bad. At least it won't be dark when I get home from work!

Don't forget to set your clocks forward one hour before you go to sleep tonight!


Making Up for Lost Time

I actually took a screen shot yesterday but neglected to post it. You know, because of the busy. And today, I get a hall pass because my office is closed so it's technically not a "work day." At least I'm not at work. I have, however, been doing plenty of stuff around the house!


Coming up: Office remodel (really, just replacing the ugly, old carpet with wood floors) and the reorganization that comes with it. By the way, did you guys know I had that much stuff in my home office/guest room? No? Because, if you did, you really should have warned me before I tried to fit it all back in there.

Day 7 - Getting the Hang of It

Last night was spent tossing and turning, counting sheep and trying not to watch the clock. Even though getting up was the very last thing on the planet that I wanted to do when my alarm went off, I limited myself to one snooze. OK, so I may have hit snooze a second time simply as a precautionary measure but I didn't end up needing it because it only took me 60 seconds to find the motivation to drag myself out of bed:


I have to be honest: while I'm doing a decent job of getting up 20 minutes early, I'm having trouble translating it into getting out the door 20 minutes early. Baby steps.

Remember how I said that posting a screen shot of my cell phone would keep me honest? Well, it didn't. At least not this morning. When my alarm went off (for the second time) today, I reluctantly rolled out of bed, grabbed my phone and took my daily screen shot:


However, before I made it even three steps away from my bed, I did a 180 and fell right back under the covers. So if this screen shot were an accurate representation of when I got up, it would actually read "6:30" instead of "6:25."

At least we all know now that if a screen shot doesn't keep me honest, my conscience will.

Last week was insane with daily after-work commitments for both me and the hubby. So I deemed it "Week of the Crock Pot." Every morning but Friday I used my extra 20 minutes to throw a little something in the slow cooker. Even though it was a super crazy few days, I took the opportunity to try out a couple of new recipes, one of which was a variation of a Real Simple recipe for Chipotle Beef Tacos.

So let's be honest: I love tacos and could probably eat them daily. Over the years, I've made countless taco recipes, including a few in the slow cooker. But last week I experienced shredded beef tacos the way they were meant to be: both easy and delicious. Seriously, these tacos were so good that, even though we just had them last Thursday, I made them again today. Since we had the leftovers for lunch on on Friday, it's only been three days since we last ate this dish. I'll let that sink in.

Chipotle Beef Tacos

Ingredients:
1.5 - 2 pound flat iron steak cut into two inch pieces (I enjoyed this cut - it's lean but still really tender. Also, my grocer was running a special.)
1 small onion, roughly chopped
4 cloves garlic, chopped
1 can chipotles in adobo sauce (I used about 3-4 of the peppers, chopped, and about 4 teaspoons of the adobo sauce - but get as crazy as want!)
1 teaspoon dried oregano
2 bay leaves
1 teasppon salt
12 corn tortillas (I like using the small ones and doubling up on them street taco-style)


Optional toppings:
small bag of pre-shredded cabbage (one of the shortcuts I've mentioned loving)
diced onion
chopped fresh cilantro
lime wedges
jalapeno relish (if you're lucky, you have a neighbor who makes killer jalapeno relish like mine does)


Directions:
1. In a 4- to 6-quart slow cooker, toss together the beef, onion, garlic, chopped chipotles, adobo sauce, oregano, bay leaves, and salt
2. Cover and cook until the beef is very tender, on low for 7 to 8 hours or on high for 3 ½ to 4 hours (personally, I set my Crock Pot to cook on low for 4 hours, after which it switched to "Keep Warm" for another eight or so hours before I made it home)


When it's time to eat:

1. Transfer beef mixture to a medium bowl and shred (leave behind excess "juice," unless you're into that sort of thing)
2. Heat tortillas
3. Spoon beef mixture into warm tortillas and add toppings of your choice


Serves 4. Makes good leftovers. (I may have even said to KT that they were better the second time around...)


FYI - To streamline my morning, I chopped the onion, garlic and beef last night and stored them in plastic bags in the refrigerator. I set out the can of chipotles and dried spices before I went to bed, leaving only the chopping of the chipotles for this morning. It seriously took me less than 5 minutes to get everything into the crock pot and get on with my routine.

I encourage you to make this super simple taco recipe right this very minute. You'll be enjoying it in mere hours. Go ahead. I'll wait. Tell me what you think.

I didn't go to bed all that late last night but 6:25 seemed to come rather early this morning. It's definitely a Monday.



Also, I'm not sure how I managed to get up 20 minutes early but still get to work ten minutes late. The math just doesn't add up there. Apparently I'm quite easily distracted when I think I have extra time in the morning.

Offending White Chocolate Mocha Lovers Everywhere

I was at the grocery store Monday evening, which was odd because I always go to the grocery store on Sunday afternoons. The experience was made even more strange because I went to a different grocery store than I normally go to. Look at me stepping out of my comfort zone!

Anyway, about mid-way through my shopping trip, I reached the dairy display and - horror of horrors! - they were out of my usual coffee creamer. You see, I may or may not be slightly addicted to coffee...to the tune of about 40 ounces daily before lunch. And, for as long as I can remember, I've used sugar-free Coffee-Mate French Vanilla creamer. If the grocer happens to be out of the sugar free variety, I can be tempted by fat-free but that's about as crazy as I get. Usually. 

I digress. Crouched in front of the dairy case, in the way of other shoppers and unable to find any French Vanilla creamer, I made a split-second decision to try the oh-so-yummy-sounding International Delights White Chocolate Mocha creamer:


Folks, excuse the brevity of my "review" but International Delights White Chocolate Mocha creamer is anything but "yummy." I honestly can't believe this product made it past the taste testers and onto the shelves. I'd describe the flavor in detail but I'm afraid there simply aren't words. "Ass" is about all I can come up with.

An explanation - not an excuse:

Each Tuesday night, I meet up with a group of fun-loving geeks to drink beer and answer pop culture and general knowledge trivia questions. Naturally, I tend to be up a bit later on Tuesday nights than the other nights of the week. But last night, I was determined to wrap up our festivities early so I could get a good night's sleep and wake up at 6:25, refreshed and ready for my day. 

That didn't quite happen.

Though I'm pretty sure I was asleep by 11:00 (yay!), at about 2:30 I was roused from my slumber by a dog situation that demanded my immediate and focused attention. After a good half hour of half-asleep-situation-rectifying, I was finally back in bed. 

Fast forward a few hours.

I awoke suddenly, fearing that I'd slept through my alarm! For the life of me, I couldn't remember hearing it go off. I looked at my phone and, sure enough, it was already 38 minutes past the hour! I quickly got out of bed, let the dogs out, and started a pot of coffee. "Wow, I'm exhausted this morning," I thought as I went through the first steps of my normal morning routine.

I happened to glance at the clock on the microwave. It took me a moment to process what I was seeing. I double-checked the morning's screen shot just to be sure:


Five? Not six??? I felt cheated! I was owed another 47 minutes of sleep! I would get another 47 minutes of sleep. I turned out the kitchen lights, returned to my bedroom, and crawled back under my nice, warm, comfy covers. A little while - and possibly a couple hits of the snooze button - later, I woke up to find this:


This 20 for 20 challenge just might be more difficult than I initially thought.

Each weekday, my alarm starts going off at 6:15 but, in all honestly, I'm not typically up and functioning until between 6:45 and 6:50. My goal this morning was to be up by 6:25 but the snooze went off at 6:24, giving me an extra minute to lie there (which turned into six extra minutes to lie there...).  Oops.


Project 20 for 20

As I’ve mentioned before, I am always running a few minutes late. Especially in the mornings. Which is a bit of a problem for many reasons but, most importantly, because mornings are a huge source of frustration for the hubby and me. You see, the two of us work for the same company. And the hubby does not like to be late. At all. Ever.

My continual tardiness can be attributed to a multitude of things:

• I’ve never been the best at judging how long it will take me to get from one place to another and am notorious for underestimating travel time
• I’m always trying to fit in “one more thing” before I leave the house
• I absolutely despise getting out of my warm bed – though, once up, I’m surprisingly chipper


(Quick aside: In high school, though I was a straight-A making, super-involved student, I once got in-school suspension for having too many tardies. True story.)

It’s been said that getting up just 20 minutes earlier can relieve much of the stress and rushing around associated with trying to get out the door on time. So I figured that I’d give it a try.

Inspired by challenges such as Kendi’s 30 for 30 and Rosi + Tart’s 10 with 5 (which are both ultimately about keeping things simple), I decided to institute my own personal challenge: Project 20 for 20.

Here’s how it works:

Starting tomorrow – and for the next 20 work days – I commit to getting up and out of bed 20 minutes earlier than usual. I’ll keep myself honest by posting a screen shot of my cell phone/alarm clock daily and promise to let you know whether or not my getting up earlier has any positive affect on our morning routine.

Warmer Weather Calls for Lighter Fare

I'm sure the same is true for most but the weather always seems to influence my food choices. At the first sign of spring, I knew it was time to temporarily shelve the stews and chilis in favor of lighter and more refreshing recipes. It doesn't get much lighter, healthier, or simpler than this surprisingly filling dish!


Chicken Tossed with Spinach and Red Onions:


Ingredients:
3 boneless, skinless chicken breasts, cut into bite-sized pieces
2 sweet potatoes, cut into bite-sized pieces
1 red onion, coarsely chopped
6 ounce bag baby spinach
1 lime
Olive oil
Salt and pepper


Directions:
  1. Heat oven to 425 degrees
  2. In large bowl, toss potatoes, onion, 2 tablespoons of oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper
  3. Transfer potato mixture to rimmed baking sheet (I like to line mine in foil to make clean up a snap!) and roast until tender, 20 to 25 minutes
  4. Meanwhile, heat a tablespoon of oil in a skillet over medium-high heat. Season the chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook until browned and cooked through
  5. Rinse bowl and add spinach and ¼ teaspoon salt.  Squeeze lime over the spinach
  6. Add the hot chicken and the potato mixture to the spinach and toss (spinach should wilt slightly)
  7. Serve with glass of chilled white wine, preferably on patio






Serves four. Makes decent leftovers (believe it or not).

When Someone Else Makes It Easy

KT loathes Valentine's Day and all that it stands for: greed, corruption, the demise of American society. (Or was that how he feels about Perez Hilton? I get the two confused.) Anyway, once - sometimes twice - a day for the past week, he's launched into a rant about Valentine's Day being a fabricated commercial holiday, designed by the greeting card industry to...blah, blah, blah. So, naturally I bought a sappy $8 greeting card professing my undying love. Duh.  But I didn't want to press my luck so I left it there. No flowers. No chocolates. No gifts.

I arrived home this evening and started to prep for dinner when KT informed me of our impending Valentine's Day reservations. Imagine my surprise, confusion and delight (in that order)!

So, all of that to say that tonight's planned recipe post will take a back seat to my enjoying a fancy dinner prepared by someone else.

An Introduction of Sorts

There are many things that you'll learn about me. One of those is that I'm a sucker for recipes with few ingredients. I have neither the time nor counter space to dedicate to lots of "stuff." This recipe is quick, easy and delicious and has just ten ingredients (if you don't count the salt and pepper) almost all of which I usually have on hand (and three of which are cheese!!!): 

Easy Baked Ziti with Spinach:

Ingredients:
10 ounces ziti
1/2 pound ground turkey (or lean ground beef, if you're so inclined)
6 ounce bag baby spinach
24 ounce jar marinara sauce
1 tablespoon olive oil
1 onion, diced
1-2 cloves garlic, minced
1/2 cup ricotta
1/2 cup grated parmesan (divided)
handful (or two!) shredded mozzarella
salt and pepper, to taste


Directions: 
1. Preheat oven to 400 degrees
2. Cook ziti according to package directions (approximately 10-12 minutes, depending on brand)
3. Heat oil over medium heat.  Add onions and garlic and cook, stirring occasionally, until translucent (approximately 5 minutes)
4. Add beef, salt and pepper, and cook for another 5 or 6 minutes until no longer pink
5. About the time the meat is done, the pasta should be too.  Drain pasta
6. Before returning to pasta to the pot, add spinach, meat and onions, ricotta and 1/2 of the parmesan to the pot.  Add the steaming hot pasta and toss
7. Transfer to 9"x13" baking dish.  Top with mozzarella and remaining parmesan
8. Bake for 12 minutes at 400 or until cheese is melted



Serves four to six. Makes good leftovers.

I like that the recipe utilizes spinach and doesn't call for a ton of meat. To "healthy it up" even more, sub whole grain pasta for the regular variety and use low-fat versions of all the cheeses.

A few other things you will learn about me:
1. If there's a shortcut, I'll usually - but not always - take it
2. I'm habitually 5 minutes late every where I go (I'm working on it, I promise)
3. According to my husband, most of my recipes start with "pour glass of wine, take sip"
